Hello old friend .. AND hello halloween!

Last night I finally made it back to yoga.

After I leave a yoga class and being absence for awhile ..  I always think “why did I stop?” but truth be told, the days I can get to yoga it has seemed that I have always had another obligation- but last night .. my night was open. So my sister and I headed to class.

My instructor, Kate who I love { and she actually made fall in love with yoga } is out of town in Hawaii! so we opted for the earlier class & hatha yoga. That we could ease our way back into yoga with some good stretching and be home back in time for school work American horror story. 😉

Even with the light stretching, I felt already 100% better and even shaky! I am really hoping that Cassidy & I can do some sort of activity once a week together!

God, I missed yoga.

What are your plans? I am seeing tons of treats on instagram & blogs- I had plans to make something but then Halloween just kind of showed up  … funny how that happens. OOPS!

BUT- I did try these last night.. pumpkin spice kisses, have you tried them yet?
I think these would taste great in some cookies! Defiantly going to get some and bake with them!

MIMM: Pics from a low key weekend!

Hey guys! just popping in to say hello : ) hope you had a great weekend! This weekend was very low-key with work & homework and prepping of this coming Saturday’s wedding! I still have a few errands to run by then. Today I am getting my hair done, Wednesday is nails & Thursday is a spray tan! Woo!

We just got back from the mall, it’s a very dreary day around these parts. So I just popped a chocolate chip pumpkin bread in the oven.

I was recently at Trader Joe’s and was in pumpkin heaven when I saw they have pumpkin for almost any meal. I know that last year they had lot’s of goodies { .. pumpkin ice cream, I’m talking to you 😉 } But for some reason this year seems like there’s more items! … all the more to fuel to my pumpkin addiction. Hello October! ..so far favorite recipes + Treat yourself Tuesday

Howdy there! So, today is October 1st.. Anybody else wondering where time is going? Just back in early September I was super excited with fall trends and pumpkin overload.. thinking that it will all be over soon 😦 October always reminds me of more of the “scary stuff” haunted hayrides, ghost + scary movies! <— my favorite 🙂

Today, I am also joining in on Becky’s treat yourself Tuesday! I love love love this idea. Sometimes we can all get a little wrapped up and forget to treat ourselves- it could be anything from a simple late afternoon nap, manicure, possibly an extra extra extra serving of chocolate {<–usually my case!} or MAYBE even splurging and adding something new to your wardrobe!

This past weekend, I treated myself to a new pair of sneakers. Not that my other one’s we’re totally ruined, but sometimes a fresh pair is all a girl really needs + in fun colors = win.

Pumpkin bars with a tasteful pumpkin spice frosting

Yesterday I said I would share a pumpkin bar recipe for you.. so here it is!

Simple, tasteful, your house will smell life a fall  { even though yesterday was 90 degrees .. I was still digging it } & also a perfect frosting for these! It makes approximately 8 BARS. Perfect for your afternoon coffee or tea.. or along side your ice cream 😉

{ Adapted from Chocolate Covered Katie } Pumpkin bars

  • 1/2 cup of g/f certified flour <– this is what I used: use whatever you want.
  • 1 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 3 tablespoons brown sugar
  • 2 more tablespoons sugar
  • 1/2 cup canned pumpkin
  • 2 tablespoons of almond milk
  • 2 tablespoons of apple sauce
  • 1/2 tsp pure vanilla extract

Preheat oven to 350 F
Combine dry ingredients, then add in wet.
Spread into an oiled loaf pan or 8×8 pan.
Bake for 15-17 minutes

She did a cream cheese frosting, I didn’t have any .. but this frosting pairs so well with it too!

  • 1/2 cup stick butter <– I used earth balance
  • 1 3/4 confectioner’s sugar
  • 1 tsp pure vanilla extract
  • 1 tbsp pumpkin pie
  • 1 tbsp almond milk

Combine the ingredients, mix well, and drizzle over the bars : )
