Chocolate coconut dipped protein balls

Happy hump day!
I just got to the coffee shop where I need to get some work done, but wanted to link up with Jenn and share these little ballz of goodness, hehe.

… If you’ve been reading for awhile, you can probably tell I really like to snack on protein ballz. I’ve posted a pumpkin flavor, & traditional. I make these ALOT. But, I had to share another! 1) They are easy! 2) Super customizable! possibilities are endless & 3) Their so good! Simple enough right? 😉

Here’s what you need:

  • 1 1/4 cups old fashioned oats
  • 1/2 cup peanut butter
  • 1/4 cup unsweetened applesauce
  • 1/3 cup of honey
  • 1-2 tsp vanilla
  • coconut shreds {optional}
  • chocolate of your choice for melting*
  • 1-2 tbsp. coconut oil

Directions:

  • Mix together all ingredients {besides the chocolate, coconut oil + shred} Place mixture in fridge for 30 mins

For the chocolate:

  • On the stove, in a double broiler, place 1-2 tbsp. of coconut oil in the pan, let it melt. ADD chocolate.
  • Stir until creamy
  • Take protein mixture from fridge & form it into ball.
  • Place protein ball into chocolate dipping sauce
  • Cool on parchment paper

EAT & ENJOY !

** Note: You may eat these in one sitting 🙂 Something about the creamy chocolate coconut sauce. But it’s A-OK.

{WIAW} My standard breakfast routine

Hi lovelies!

Happy hump day! How’s it going? I’ve been running around all morning, getting some things together for this weekend, {weeee!} I can’t wait. I’m trying to get a majority of things done so Friday I can just pack 😎 I can’t wait to lounge with the girls at the pool all day Saturday, possibly try gambling & celebrate my sista! 😀

I thought today for WIAW {thanks jenn for letting us share our foodie pics!} Thought I’d share my { morning breakfast routine } it’s been pretty much the same thing for quite awhile.
But, hey it’s so darn good!

Let’s get too it!

Every morning, I wake up and guzzle some water, followed by coffee. That’s a no brainer 😉

I’ve been really enjoying this So delicious creamers, so smooth and sweet! love it!

While drinking my coffee I start to cook my oats, & cut up whatever fruit is in season to go along with some oats.
I usually eat half of it while waiting & put the other half in oats.

Today was a juicy peach : )

Not all of them go into the oats, but depending on my mood I like to toss a wide range of these to make the flavor more robust!

Sweet from honey, juicy from the pear, & filling from the oats itself & the peanut butter.

I started to really like the oats this past semester when I had an early class and I realized I had to bring something with me for that first class. I would prepare them the night before & microwave them right before leaving. Everyday is a different variation and I love how versatile they can be!

Yesterday’s were …
With blueberries, a sweet potato, & peanut butter! Always keeping my breakfast on it’s “toes”!

I used to always have “yogurt bowls” but now that’s usually my night time snack : )
& when we go out to brunch that’s when I usually have something different.

Happy Monday… errr.. almost Tuesday!. I just home and was catching up on all of your fabulous blogs<3!
Not only did today fly by but this week will too! We have Cassidy’s bridal shower this Sunday, so each day I have a little big to do list of things to get done! I can’t wait, especially for the food… : )

Camp fire oats

Growing up, I always loved smores. There’s something so fun about sitting around a camp fire, roasting marshmallows, telling stories.. and of course eating good ol’ heresy chocolate!

This breakfast tastes just a smore, but with a health benefit from the oats 🙂

  • 1/2 C. of cooked oats
  • Palm full of chocolate chips
  • Palm full of mini marshmallows
  • Sprinkle of coconut flakes

{I added pb for that extra protein boost!}

Liking the change + pain in my feet

Good morning, happy hump day.

I have already taken a hike, had breakfast & brewed coffee {AT HOME.. what a change}

Every morning I have a routine of running out to get an iced coffee, coming home to start reading blogs, breakfast, & then a workout squeeze in there before work.

Today was the opposite. Workout first { a light 2 mile hike } followed by breakfast.

I really am not a morning person, but have come to find I enjoy my mornings. There is something so peaceful. Especially these past few days and the perfect weather. I want to enjoy it!

Update:
On Monday I went to the Drs, since I have been having a lot of pain on my feet + ankles. I googled my symptoms {OF COURSE} and came up with plantar fasciitis… I wasn’t sure but I kind of fit the category since every morning I wake up and hurts to walk.. It is not that, but he said that from running outside/ my foots friction I must be irritating it and lightly bruising the tops. Eeek.

I have been taking it super easy. Monday was yoga and this morning a nice light hike. He didn’t say I shouldn’t workout but I have taken it upon myself to listen to my body and rest. I wouldn’t want it to turn any more serious.

1- I got insoles for shoes which seem to help so far
2- New sneakers may need to be second choice for better support
