“Stud Muffins”: creamy, tart, raspberry muffins!

Happy valentines day to all my loves of my life!
Hope your day is filled with lots and lots of chocolate, flowers + just feeling loved!

It’s not valentines day without some chocolate or something sweet, I know I’m going to be getting lots of chocolate throughout the next few days, so I wanted to do something a little more tart!

How about some “stud muffins” 😉 Creamy, tart & perfect for today.

What you need:
  • 2/3 cup 1/3-less-fat cream cheese, softened
  • 1/3 cup butter, softened
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 large egg whites
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup of milk + 1 tbsp. vinegar OR low-fat buttermilk
  • 2 cups fresh or frozen raspberries
  • Preheat oven to 350°.
  • Combine cream cheese and butter in a large bowl. Beat with a mixer at high-speed until blended. Add the sugar; beat until fluffy.
    Add your vanilla, egg whites and 1 egg. Beat together.
  • Lightly spoon flour into dry measuring cups; level. Combine flour, baking powder, baking soda, and salt. With mixer on low speed …add in the flour mixture with milk/ buttermilk to the ream cheese mixture, gently fold in raspberries.
  • Place cupcake liners in muffin cups/ spray with cooking spray. Spoon your batter evenly into liners
    Bake at 350° 20-22 minutes, cool, eat and enjoy!

We aren’t too big on V-day, maybe cause my birthday is the day after, so haven’t really ever “celebrated” with a dinner. But we do give cute cards + sweets and Pandora charms! 😉

MIMM: a happy thanksgiving <3

Hey there! long time no talk 😉
It’s time to slowly come back from the weekend and get ready for a new week.
Hope you had a great holiday spent with your loved ones and ready for new meals for the week, I finally polished off all the turkey last night. I love the holidays and being around the people who make my world go round but I don’t like how sluggish I get. Anyone else!?
Today I am back to normal eats but definitely going to incorporate some extra water + greens this week!

Lets back track a bit, Wednesday I had spent time in the kitchen prepping for Thursday: Peanut butter pie and a butternut squash salad with a warm apple cider dressing.
Later in the evening, my sister and my friend Jenna hit out the town for a few hours. Started with dinner and live music!

Around 10 pm the boys had joined us!

It’s always fun to go out thanksgiving eve ~ We ended the night coming home and re heating one to many stuffed peppers!

Thursday we finished some last-minute things and headed to my moms for dinner. It was a special thanksgiving since finally all the girls in the fam are married AND Oliver’s first!

After dinner we played games, had dessert and then got ROLLED out of my moms, haha 😉

The remainder of the weekend was low-key. I didn’t feel well Friday, so I took it easy as well as Saturday!
Sunday, we went out for a late lunch, saw a bit of the game + I spent the rest of the night at Starbucks doing school work <— 2. more. weeks !

Always something to be grateful for<3

Happy thanksgiving everyone, wish you a day of food, comfort + loved ones {and food comas!}
Today and everyday we should all be grateful. But thanksgiving is a sure reminder to come together and be with the ones you love over a good meal, and conversation.

Thankful for not only my family, but the crazy support they give me daily. When you have hopes, dreams and bad days- they lift me up.

Thankful for my sisters daily. I talk to them everyday about anything and everything. Nothing like group therapy for free 😉

Thankful for George, he makes me realize life’s short and it’s meant to be enjoyed, thank you for that ❤

Thankful for chocolate. Thank you for coming in many different sizes, flavors and making my taste buds happy.

Thankful for for coffee. Yes I AM. Nothing beats a good cup of coffee

Thankful for learning new things which open new doors

Thankful for my body and everything it allows me to do: downward dogs + running, thank you.

Thankful for rainy days, sometimes you just need em.

Thankful for friendship.  They accept you for all that you are. Crazy or not 😉

Thankful for  this BLOG. It has helped me grow ALOT in just a short amount of time, meeting people and learning from one another, it’s pretty awesome<3

Thankful for days off, like today, to celebrate + be with everyone.

4th of July

Hope everyone had a happy 4th!

Yesterday I was really looking to do something low key, yet fun & enjoyable. Last night fit to exactly what I wanted to do.

The morning started off with:

Followed by a nice 2.5 jog around the neighborhood. I wish I would have been able to do more, but it was hottttttttttt yesterday.

Around 1230, we decided to go to the pool {at my mamas house} since yesterday was Thursday my mom had Oliver!
We stopped by for a half an hour or so to see the little love muffin.

My friend molly joined us, so we got to actually have a  day off together from the restaurant and catch up on… drama 😉

After the pool, it was time for some snackage, a quick rest & than get ready for the night.

We met up with our friends Rich, Amy & their darling daughter Athena for some dinner.

-I ordered mussels in a white wine sauce
– Summery salad : greens, pears, chicken & walnuts
– And had a little bit of others appz

They live in reading, so we went to the Reading Phillies Stadium
for some nice fireworks + listen to the orchestra play!

When we sat down, we thought we were tucked away in the corner since no one else was over there
but.. we had the best seats in the house. They went right over us!

It was a great night spent with great company! 🙂 How it should always be.

Today & tomorrow I have to work. But, Sunday I’m off & it looks like my sister Courtney is coming home for the day
So if it’s nice out.. looks like it will be another pool day.
