Memorial Day snaps {5/27}

Today was a jam-packed day! George’s friend Dimitri is here visiting from Athens, so we spent the day with him
doing some tourist things 😉 of course our favorite.. the park and the outlets! Coffee and ice cream stops too!

.. the boys { George and Duncan are already asleep.. } but were supposed to make some turkey burgers later.

MIMM! Glen Onoko Hike!

Hello Marvelous Monday friends!!! If you like hiking, then I’ve got a place for you!

Beware-I am sore. So sore! For someone who usually hikes during the week at the park, the hike we did yesterday at Glen Onoko was no joke!

George and I left the house a little after 10am, to head to the Poconos. We planned to pack our own breakfast + snacks for the ride and hike. We arrived a little after 1130. Drove around the town of Jim Thorpe and then found the place which was probably 2-3 miles away where the hiking trail was.

Bagels, trail mix, clif bar, zone bar, fruit + water + the muffins I made = perfect fuel :)

It was beautiful! Along water, rocks, and waterfalls! We thought we were going to be able to squeeze in biking too. But once we finished we were hungry 😉 and realized how sore we already felt!image (20)
I started with a sweat shirt and had to take it off- definitely worked up a sweat! the waterfalls were so nice and gave off a nice breeze 🙂

We sat on top of the flat rocks which over looked the valley and ate our clif bars & the apple, and caught some sun rays for a little 😎
there were other hikers doing the same, it was such a nice spot.

After our pit stop, we heard if we went up more we could go behind the water fall! I know I’m smiling in that picture, but I was definitely scared prior and basically crawled my way to and from and was holding on for dear life 🙂 but It was so cool! and soooo refreshing!

It took a little over an hour to get up the mountain, we stopped a lot! I was hoping that there was going to be more of a trail after words at the top, but there wasn’t. I had no idea how sore and tired were going to be. Exploring was so much fun. I’m glad we brought the book bag filled with water, and snacks. The trip back down was a lot quicker but you had to watch your step and hold onto trees!

After we got back to car, we freshened up and went back into town to get something to eat. We went back to this place where we ate two years ago with some friends after rafting. Broadway which is located at the Inn.

While we were hiking we both agreed we could go for a Greek Salad with pita bread… sure enough when I saw it on the menu, we had to get it!  It was nice to sit back, relax and enjoy each others company while planning out some more adventures this spring/ summer.

Once we finished we both decided to call it day- I’m glad the drive wasn’t far- I was home, showered and in bed around 9!

Quick + easy warm sauteed salad

Hello all!

Hope your Saturday is going fabulous! I’ve been go go go since I woke up, and got a lot of things accomplished:)

Coffee, hair cut, baked, breakfast,  hiked, painted my toes! + made lunch ….  now off to work!

I just made this QUICK + YUMMY sautéed salad, had to share. {don’t mind the pic}

  • Sautee baby bella mushrooms { handful }
  • Sautee 1 red onion
  • Add in {pre cooked quinoa + wild harvest blend <— can be found at Trader Joes* }
  • Lastly, a handful of spinach{place veggie burger in oven on the broiler setting}
  • Once finished topped your sautéed mix with the burger! Easy!{I used olive oil, salt + pepper, and a few sprinkles of oregano.}

Alrighty friends, I’m off to work for the evening- tomorrow George + I are going to Jim Thorpe for a little hiking action! I can’t get enough of it.

Hike Happy

Monday we meet again! I can’t get over how fast my days and weeks are going by. Which means I better get cracking on some things 😉 If you live around these parts, {PA} you would have had a beautiful spring weekend! expect Friday {April showers} I love love love getting outside when the weathers in it’s prime time.. but who doesn’t ?!

This weekend I worked Friday and Saturday but still managed to enjoy the beauty*

Since Sunday was going to be dedicated to dress shopping, *Cassidy found her dress Saturday!*{this will be a whole other post!} we stuck to still getting together, but for a yummy brunch with the girls. We went to in town to the Black Lab where we all ordered omelets and started with cinnamon buns and drank lots and lots of coffee while catching up ❤

After brunch we went our separate ways to get some wedding things accomplished for Cassidy and I told my friend Larissa I would meet her at the park around 4. This is probably the fourth time I’ve been there this week! Once spring time comes there’s no turning back! The park, and outdoors become my gym. I honestly drrrrread the thought of going into the gym or treadmill. What’s not to love.. beautiful scenery, mountains, wildlife, sunshine, different trails. I still need to remember to incorporate weights though. Yesterday we did a 3.5 mile hike, up one hill and then finished along the water.

I love hiking, it’s probably one of my favorite forms of cardio and exercise. Your constantly moving and the scenery it’s always different. You can make the journey however you want. whether you chose to make it laid back and relaxed or fun with friends.. or more hard-core. It’s all up to you, but it always fun!

Off to finish two more classes and then…. maybe the park if the rain holds off 🙂 hehe
