Always something to be grateful for<3

Happy thanksgiving everyone, wish you a day of food, comfort + loved ones {and food comas!}
Today and everyday we should all be grateful. But thanksgiving is a sure reminder to come together and be with the ones you love over a good meal, and conversation.
always an abundance of things to be thankful for.

Thankful for not only my family, but the crazy support they give me daily. When you have hopes, dreams and bad days- they lift me up.

Thankful for my sisters daily. I talk to them everyday about anything and everything. Nothing like group therapy for free 😉

Thankful for George, he makes me realize life’s short and it’s meant to be enjoyed, thank you for that ❤

Thankful for chocolate. Thank you for coming in many different sizes, flavors and making my taste buds happy.

Thankful for for coffee. Yes I AM. Nothing beats a good cup of coffee

Thankful for learning new things which open new doors

Thankful for my body and everything it allows me to do: downward dogs + running, thank you.

Thankful for rainy days, sometimes you just need em.

Thankful for friendship.  They accept you for all that you are. Crazy or not 😉

Thankful for  this BLOG. It has helped me grow ALOT in just a short amount of time, meeting people and learning from one another, it’s pretty awesome<3

Thankful for days off, like today, to celebrate + be with everyone.

Waiting for it to happen …

So I’m still waiting for my skin to turn orange, say what ?!… 🙂

My mom has told me multiple times that if you eat tons of orange food .. { which is great for skin } your skin can turn an orange pigment – so I am waiting since I have been on a squash kick! hehe

Sunday we polished off a squash. Loved it so much I got more yesterday!

My other orange eating has been a sweet potato everyday & carrots! .. not to say I want my skin to turn, but I am totally getting lots of orange eats! yay for beta-carotene! 🙂

Last night Cassidy & I made it to another yoga class- score!
plus, the place I go to is on living social: 5 for 25$ great deal. So all the more to keep going & switching tings up.

Do you go through any phases with food?

World Cafe Live & caramelized candied walnuts

Hey! Happy Wednesday hump day to you all! Another week that just keeps on flying 🙂

When I left you last on Monday, we were heading to the city with some friends for dinner, drinks & music at world café live! It was such a great time. We saw Federico Aubele { who George has been playing for years } So it was finally great to see him live!

We enjoyed cocktails, wine & lot’s of sharing of food! My camera didn’t work well in the dim lighting, but here’s a few pics!

Now onto caramelized candied walnuts. A simple thing, but whenever I see them on a salad I always gravitate towards that salad. Something about them that I love! I love sweets, so there’s no issue with me having sweets in my salads either 😉

They became caramelized due to one ingredient I added: coconut oil.

What you need:

  • 1 cup walnuts
  • 1 cup sugar
  • dash of cinnamon
  • 1 tbsp. coconut oil
  • Pinch of sea salt

On medium heat, place walnuts on skillet. Pour sugar over them & watch carefully!
Stirring occasionally & add the 1 tbsp. of coco oil.
Once sugar has become a liquid place on a pan, sprinkle your cinnamon & salt and place in oven @450* until browned.
Let them dry ~ and put them in your favorite salad!

Great addition to any salad, but most defiantly a fall salad!

MIMM: banana bread french toast + weekend pics!

Happy Monday everyone! Hope you had a fab weekend & enjoyed your extra sleep on Sunday morning 😉 somehow it caught up to me later in the day?
This weekend I had to study a lot since today/ night we won’t be around and meeting our friends in the city.
but, I got a marvelous fall walk in, trip to Trader Joes, wedding dress shopping with Jenna 🙂 {and I think she found IT! } protein ballz & starbies my favs- I also wanted to share this Banana Bread French toast with you! <– check end of post. But, here’s a few snippets form the weekend.

… >> Now onto the French toast <<  ..
it’s very easy! especially if you have some laying around like we did.

All you need is…

  • 2  Eggs: 1 egg white, 1 whole egg
  •  2-3 of your banana bread
  • Dash of vanilla extract
  • 2 Tbsp Syrup
  • 1/2 Tbsp Dark Chocolate Chips
  • 1/2 Tsp Ground Cinnamon
  • Cooking Spray/ coconut oil
  • Few tablespoons of greek yogurt <– depending on your liing
  • 1 tbsp. peanut butter

Directions:

  • On medium heat, spray skillet with coconut oil — or your choice!
  • While the skillet is heating up … Whisk together 1 egg + 1 egg white, Add in a dash of vanilla extract & the cinnamon.
  • Place pieces of bread in your mixture & place on the warm skillet – cook until each side is nice & golden brown.
  • Layer each piece with a mixture of yogurt & peanut butter for a nice spread
  • Top with syrup & chocolate chips, eat + enjoy 🙂

Good morning & hello November!

hello november ~ my favorite month :)

Hope you all had a great Halloween yesterday, whether it was handing out candy, participating in festivities or just relaxing on the couch with some take out!IMG_7226

As much as I love September, because of all the anticipation for fall. and October because well, pumpkin everything. I always really enjoy November just as much, if not more …  It’s more festive, more family time, more parties {so it seems} more fall things!!!

November is already looking very jam-packed:

Nov 4th – world café live  + dinner with friends
15th – mama’s birthday
 16th – amy & rich’s annual party
27th – thanksgiving eve festivities { whatever they maybe!}
28th – thanksgiving ❤

Seems like once a week we have something going on, which is great to look forward too! 🙂

I am already looking at something’s to bring to thanksgiving & a nice treat for the annual party. YUM!

Also this November, for myself I want to try too:

> Drink lemon water in the mornings prior to coffee. Lately seems like I forget about the water & my liquid is just caffeine… not complaining but I know my body needs more water.
> Switch up workouts as best as I can! Even something fun during the week with my sister, or George. It’s more fun!
> Focus on the last month of school – I know we have a lot of prior engagements coming up, but in-between must really focus on my last month!

Small things, but mean a big difference 😉
