Healthy, decadent chocolate mug cake! { recipe }

You guys, mug cakes are genius. Really. I promise this isn’t an April Fools Joke on how this tastes so divine from just a few ingredients!
The other week when we got home from Florida all I wanted was dessert. Especially chocolate or peanut butter ( duh ) I somehow didn’t any dessert while there expect a few licks of ice cream. We hadn’t gone food shopping yet so I was kinda stuck. Then, a little flash back came to me .. I have mugs and had a few ingredients on hand to help my craving! #success

Banana, chocolate peanut butter mug cake!

It is so decadent, I love how well these ingredients came together until you try it for yourself!
-1  very ripe banana
-2 egg whites
-1 tbsp of peanut butter or nut butter of choice
-1 tbsp unsweetened apple sauce
-2 tbsp. un sweeten dark cocoa powder
-dash of vanilla
-1 tbsp of chocolate chips
 -Mash the banana until it’s smooth and no lumps – try your best, I still had a few! { I used a fork to cut/ mash }
-Add your egg whites, mix well, followed by the other  ingredients  .. continue to mix well.
-Place in mug, add your chocolate chips to the top
-Microwave for two & half minutes

“Blonde” Brownies

.. Growing up, my mom always had baked goods around and I was the taste tester for all batters. Even if I wasn’t home she would save some of the batter for me 😀 We don’t believe in salmonella { kidding…}
My fav part! chocolate chip cookie mix!:)

I remember one time I asked her what she was making and I said ” OH you mean the blonde ones “{ like hair color 😉 } Seeing them in their form reminded me of the brownie. so the blondies were always the “BLONDE” ones 😉

I haven’t had one in so long until the other morning after our brunch, in the display there were tons of baked goods. I asked the guy what his favorite was & said he loved the blondies cause they go so well with coffee { its true } After I had one, I instantly remembered why I loved them!

Nothing crazy, or healthy ingredients
Just traditional blondies.

  • 8 tablespoons (1 stick ) butter, melted
  • 1 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 cup all-purpose flour
  • 1/2 t0 1 cup chocolate chips
  • Pre heat oven to: 35
  • Spay cooking spray to an 8X8 pan
  • Mix melted butter with brown sugar – beat until smooth. Beat in egg and then vanilla.
  • Add salt, stir in flour and than your chips!
  • Pour into prepared pan. Bake at 350°F 20-25 minutes, or until set in the middle.

Treat Yourself Tuesday: the little things.

Hey ya’ll! Just popping in to share a Treat Yourself Tuesday post- hosted by my girl Becky! I did a post a few weeks ago & shared some new sneakers I treated myself too.. { god I love sneakers 😀 } but today is sharing the little things in life. I love the little things, to me they are the big things! I find myself treating myself to lot’s of small things all the time 😉
The little things mean the most
Here’s a few ways I treated myself the past few days:

Latte & a cappuccino. On Friday I treated my sister and I to some specialty coffee drinks! I always love catching up over coffee & fun coffees too! 🙂


Banana bread french toast ~ enough said..

Cupcakes! I have never tried crumbs bake shop and our mall has recently put in so many new stores including crumbs! I had to taste test!

Noting like ending the week & prepping for the new week with a bubble bath, candles & face mask.
If you can’t get to the spa.. do something nice for yourself at home! 🙂

I was about to go for a walk with George, but my lady friend is here and it’s a killer :-(.. I am taking a time out & putting the heating pad on and resting before work. It’s so beautiful out too! But, what can ya do!

Easy peanut butter frosting

Hey hey! Happy Friday, hope you all have a great labor day weekend 🙂

Yesterday was my first day back to class. Let’s just say .. I am definitely not in the mood to sit and do school work right now. I was really starting to enjoy that freedom 🙂 As always, with anything, just takes some time to get back into the swing of things!

This morning I went to one of my local coffee shops to get acquainted with my accounting book & the online part. I didn’t last nearly as long, but it’s a start! The other part of the semester I also have an online class and a computer class which could possibly help around these parts! We touch base on blogging!

Anyways, don’t want to ramble to much. But I did want to share an easy peanut butter frosting I made two weeks ago to go with the brownie cupcakes I made for Cassidy’s bridal shower! It was so good and got lot’s of reviews : )

Brownie cupcakes are a huge hit in this house and actually one of my favorite desserts. My mama is the one that started doing this idea awhile back! { thanks mom 🙂 }

1 cup butter or margarine
1 cup creamy peanut butter
4 cups powdered sugar
1/4 cup milk
1/2 teaspoon vanilla

^ Start with butter, than add peanut butter, add in each ingredient until creamy.
I suggest placing in the fridge to let it chill*
than place in piping bag and get to it! 😀

…. This frosting was so easy & I whipped it up the night before the party & frosted right before everyone came.
