Chicken & Kale Greek Avgolemono soup

Hello lovely people. Happy hump day AND What I ate Wednesday. I have a delicious soup to share with you all 🙂

Prior to going to Greece my first time. I had tried numerous types of Greek food thanks to George { they are all my favorite! } but to name a few.. spanakopita, pastistio , keftedakia, baklava, … the list goes on!

…But something I love about Greek food is 1) how yummy it is {no brainer} 2) healthy + hearty & 3) comforting. Much like this soup! Nothing beats soup on a cool fall day to warm your soul. Am I right?! 😀

This soup can be made two ways. Which we made both this past week! And I think it’s a tie! I am more of a chicken kinda gal, so I love It that way. but with the meatballs.. oh my word!

Here’s our way with a few tweaks!
Ingredients:

  • 1 lbs chicken thighs
  • 3/4 cup white rice
  • 1/2 cup harvest grain blend from Trader Joes
  • 1-2 tsp salt
  • 1 tsp pepper
  • 2 tbsp. EVOO
  • 1-2 bay leaves
  • 1/2 tsp. red pepper flakes
  • 1 bunch kale
  • 2 carrots diced + chopped
  • 2 celery stocks diced + chopped

For the Avgolemono sauce:  which translates to meaning “Egg lemon sauce”

  • 2 medium sized lemon
  • 1 egg
  • 1 tsp olive oil

Directions:

  • In a large pot, with 3/4 water: Bring to a boil + cook the chicken thighs for 25 minutes.
  • Add carrots, celery.
  • Add rice and grains.
  • Add in all seasonings & EVOO. Boil for another 10 minutes.
  • Let the soup rest.

For the “Egg lemon sauce” >  this is the tricky part*

  • Beat the egg, olive oil & juice from the two lemons. Whisk gently!
  • Add a small amount of broth from the soup to this mixture.
  • Transfer the egg mixture into the pot of stock and stir until combined. To retain a frothy top layer, don’t over stir the mixture.
  • Serve immediately and …with bread! 😉
